CREAM OF FRENCH ONION & MUSHROOM SOUP w/ CROQUE MONSIEUR CROUTONS
When I woke up this morning and found out it was National Grilled Cheese Sandwich Day, I was compelled do something special.
The croutons are mini Croque Monsieurs. To get the béchamel in the dish I added it to the soup to make it creamy. Then covered the entire dish with Gruyere cheese and broiled it.
Maybe not the best thing I've ever made, but probably my favorite.
The dish stems from many food memories. Fondue in Gruyere, Switzerland, Classic French onion soup at Old Main Inn in Carol Stream Illinois and the cheese soufflé at Suzette's in Wheaton, Illinois.
