CREAM OF TOMATO BASIL SOUP
I used canned tomatoes from my God-Mothers garden, (thanks Auntie Gail).
Classic mire poix. Once the mire poix is soft add a bit of butter and flour and wisk that in.Throw in S&P, dried thyme and basil. Add in tomatoes and chicken stock. Simmer, simmer, simmer then wisk in some condensed milk or heavy cream. Pureé with a handfull of fresh basil.
Serve it up and top with fresh basil.
