Taco Tuesday - Lakeside, Ajijic

I've had versions of this dist in Chicago, Houston and Austin. This is a lowbrow cuisine with so much potential!

These tacos start with a base of corn chips and a Tex-Mex style ground beef as the base. Kind of similar to a Frito Pie. Then come the toppings!

Instead of preparing my walking tacos with a set list of toppings I am putting a great deal of work into creating some delicious additions for you to choose from.
