RACK OF LAMB
Salt down the rack of lamb. Rub with lemon, olive oil, Greek oregano, S&P. Let sit for a few hours. Sear in cast iron on all sides. Roast to 120 degrees, take it our and rest it for 10-15 minutes. Slice and serve up with pita.
